Israeli Startup DouxMatok Has a New Sugar Substitute

DouxMatok develops flavor delivery technologies while improving the nutritional profile of food products.

DouxMatok, an Israeli food-tech company, creates new targeted delivery of flavor ingredients. The company boasts that its new sugar substitutes and salt products enable healthier consumption of foods without compromising taste.

The company was cofounded in 2014 by its CEO Eran Baniel and the inventor of its product Professor Avraham Baniel.

Everybody wants to be able to eat whatever they want without the consequences. Calories free sweets that really do taste like the real thing and are sugar-free.

With increases in the rate of diabetes in the west due to poor diets and the increasing consumption of junk food the development of a tasteful and healthy sugar alternative is more important than ever.

And the problem is not just a lack of will power or eating smaller portions. Consumers do not always know about the added sugar in what they eat. Fast foods from hamburgers to pizza have added sugar. Even products which say that they have no added sugar may still have natural sugars like fructose from fruit.

All of the current sugar alternatives come with one problem or another. The first is taste. People do not generally enjoy the taste of products made with sugar substitutes.

The second problem is with health. Some sugar substitutes may have long term detrimental health effects. Others may actually cause you to eat more because they leave the body craving actual carbs.

So any new tasty and healthy substitute for sugar as well as salt will be a most welcome new product sure to make its inventor millions.

DouxMatok develops flavor delivery technologies while improving the nutritional profile of food products. The company holds 24 granted patents and boasts that its sugar reduction solution maximizes the efficiency of sugar delivery to the sweet taste receptors and enhances the perception of sweetness, enabling substantial sugar reduction without compromising taste, mouthfeel, or texture.

Its solution is based on real cane sugar and, therefore, has the same sensorial profile, taste and other functionalities as sugar.

Douxmatok is a start-up partner in EIT Food, recipient of the Horizon 2020 SME, winner of a number of national and international food-tech competitions

The company recently entered a strategic collaboration with Lantic Inco, a major sugar manufacturer in North America, to deliver its sugar reduction solution to food companies there. DouxMatok’s solution, which was validated in multiple consumer tests and professional panels, is expected to be available to the food industry in the United States as of 2021.
